Rollmops originated in Germany as a variation of the Bismark Herring. The head and bones are removed, the remaining fillet is marinated in a mixture of spices, onion and vinegar. The fish is wrapped around sliced pickles then returned to the marinade and left for 4-6 days.

Smoked salmon is a favourite starter dish in many parts of the world.
